just incase anyone here has had this problem I found a way to solve it
BUG
When in training mode if you try subing a player in the starting 11 it resets once you back to the pitch
SOLUTION
Go to player settings and change the control pad icon to manager (grey guy with his hand up) do the changes go back to pitch let it change then go back to player settings and set back to you controlling the players
god knows why konami did this but hope this helps
