I don't know if this applies to everyone using 7/Vista but it really helped me a lot.
For reference, I have a x-fi extreme gamer sound card.
My problem, which I've posted about before with no replies, is that the crowd sounds are all screwed up. The 'ambient' crowd noise was very quiet, and the chants were really loud and the overal effect was to make me want to put my fist through the screen if I played for more than an hour.
Get the program Creative Alchemy. Add PES to the list of games in the program and then run the game in XP SP3 compatability mode.
And huzzah, the crappy sound that has been plagueing me for so long is gone and it sounds just like it did on my old trusty XP machine.

I found an explanation for this, not that it means all that much to me:
"As PES is a direct sound game it can not use soundcard in win7 and vista directly as HAL is removed in those systems."
